French Toast

1/4 cup whole-wheat flour
1 tsp nutritional yeast flakes
Pinch of cinnamon and nutmeg
1/4 tsp salt
1 cup coconut milk (the canned kind - in the Asian food aisle)
6 to 8 slices of favorite whole grain bread

Mix dry ingredients (flour, nutritional yeast flakes, salt, nutmeg, cinnamon) into bowl.  Stir in coconut milk until well blended.  Dip slices of bread into batter on both sides.  Place on pre-heated oiled griddle and cook until golden brown (3 to 5 minutes).  Repeat on other side till golden brown.  Serve with fruit, pure maple syrup, etc.

**We weren't too sure if we would like this recipe, but it turned out delicious!  Definitely a favorite at our house ... our kids can never get enough of it and we have to always double the batch!!

  4. You can also get them at Sunflower Market. If you're trying to boost fruit and vegetable intake, sunflower market is a MUST. They have AMAZING prices, quality, and selection. They are a trek (one by University Mall in Orem and one across from Fashion Place Mall in Murray), but I always save a ton of money there. They also have a lot of gluten free and other health foods there.

  5. Ramona - we use so little of the yeast you could come borrow some from us. We have a huge canister we might never get through...
